Mutton Stew
A gentle, coconut milk-based stew with soft vegetables and whole spices floating in a pale, fragrant broth. Kerala stew is quiet comfort food — not loud with chilli, but warm with cardamom and black pepper.
Ingredientsfor 4 servings
- Mutton : 300 gm
- Onion : 1 no (chopped
- Ginger : 1 tsp
- Green chillies : 4 nos (slit
- Tomato : 3 nos
- Coriander powder : 1 tsp
- Turmeric powder : ½ tsp
- Garam masala : ½ tsp
- Coconut second milk and first milk : 2 cups
- Coconut oil, to taste
- Coriander leaves, a few
- Salt, to taste
Preparation
Step 1
First clean mutton pieces. Mix mutton, garam masala, ginger, green chillies, salt, 1 tsp oil and onion.
Step 2
In a pressure cooker add the mutton and fry for 5 minutes.
Step 3
Add 2 tbsp coconut milk or coconut second milk with little water. Cook the mutton.4) Mean while in another kadai, add little water. Fry the chopped tomatoes and fry till tender.5) Add coriander, turmeric, and fry well.
Step 4
Add the cooked mutton with the juice in this masala. Make this a semi masala. 7) Add the first milk or the rest of the coconut milk init. Bring to a gentle boil.
Step 5
Give it a good stir. Add coriander leaves and serve hot with rice.
Tip
If the gravy reduces too fast before the meat is tender, add hot water in small amounts. Cold water toughens the meat.
