Mutton Pepper Fry Kerala
Mutton Pepper Fry prepared in kerala style is a spicy mouth-watering dish that goes well with porotta, naan, roti and almost all rice dishes. Roasted mutton chunks in thick, oil oozing, pepper rich gravy is the speciality of Mutton Pepper Fry.
Ingredientsfor 4 servings
- 1/2 kg Mutton boneless
- 2 tbsp Chilly powder
- 1 tsp Garam masala powder
- 2 tbsp Coriander powder
- 1 tsp Turmeric powder
- 1 sprig Curry leaves
- 6 nos Green chillies
- 1 tbsp Ginger — chopped
- 1 cup Shallots(chopped (Kunjulli)
- 1 tbsp Pepper — crushed
- Ginger garlic paste - 1 tbsp
- Salt, to taste
- 1 tsp Mustard seeds
- 1/4 cup Coconut oil
Preparation
Step 1
Clean and cut mutton into medium pieces.
Step 2
Cook the mutton along with chilly powder, coriander powder, turmeric powder, salt, ginger-garlic paste and a few curry leaves in a pressure cooker.
Step 3
Set a pan over medium heat and pour in the oil or a kadai.
Step 4
Let the mustard seeds crackle.
Step 5
Add curry leaves, shallots, green chillies and ginger and sauté, till it becomes golden brown.
Step 6
Add the cooked mutton and cook, till the oil separates and is well roasted.
Step 7
Add pepper and garam masala and cook for 1 - 2 minutes.
Step 8
Garnish with curry leaves.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
