Mutton Kuruma
Its a curry which can be taken with all main dishes - mutton kuruma.
Ingredientsfor 3 servings
- 1 kg Mutton
- 3 nos Cardamom
- 5 nos Clove
- 8 Corns Pepper
- 1 nos Cinnamon
- 2 tsp Red chilly powder
- 4 nos Green chilly
- 1 tsp Turmeric powder
- 2 tsp Coriander powder
- Salt, to taste
- 2 nos Onion
- 1 inch Piece Ginger
- 8 Cloves Garlic
- 6 nos Cashew nuts
- 1 tbsp Fresh cream
- 1 cup Coconut powder
Preparation
Step 1
Grind all the masalas and powders: cardamom, cloves, cinnamon, pepper, red chilly powder, coriander powder and turmeric powder.
Step 2
Heat the pressure cooker and cook onion, ginger, garlic and green chilly.
Step 3
Next, add the griound masala and give it a good stir.
Step 4
Add mutton to it.
Step 5
Add water if needed and close the cooker and allow it to get cooked.
Step 6
Grind the cashew nuts.
Step 7
To the ground nuts add coconut powder.
Step 8
Add some fresh cream and little water and grind it.
Step 9
Pour this mix to the mutton curry.
Step 10
Give it a good stir and allow it to get boiled.
Step 11
Then off the flame and serve to the serving dish.
Tip
Low and slow is the only way with mutton. Rushing the cooking gives you tough, chewy meat instead of fork-tender pieces.
