Mutton - Goat Curry Kerala Style
A deeply satisfying mutton - goat curry kerala style simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 1 kg Mutton clean and cut it into small pieces
- 2 nos Onion — sliced
- 2 nos Tomato — chopped
- 15 nos Dried red chillies
- 2 nos Garlic bulb
- 1/2 tsp Turmeric powder
- 1 tbsp Coriander powder
- 2 piece Ginger
- 2 tbsp Coconut grated and — ground
- 4 nos Cloves (Grambu)
- 2 nos Cinnamon (Karugapatta)
- 3 tbsp Oil
- 1 tsp Cumin seeds (Jeerakam)
- 2 tbsp Poppy seeds roasted and ground, Kashakasha
Preparation
Step 1
Grind coriander seeds, cumin seeds and red chillies.
Step 2
Heat the oil in a pressure cooker.
Step 3
Fry whole garam masala.
Step 4
Add chopped onions and continue frying till golden brown.
Step 5
Add coriander paste and fry well.
Step 6
Add ginger and garlic and continue to fry.
Step 7
Add mutton pieces and fry some more.
Step 8
Add a teaspoon turmeric, tomatoes and coconut and fry for about 5 minutes.
Step 9
Add salt and 2 cups of water to Mutton Curry.
Step 10
Close the lid and cook Mutton Curry for 15 minutes.
Step 11
Garnish with coriander leaves in the Mutton Curry.
Step 12
Mutton Curry is ready. Serve Mutton Curry hot.
Step 13
You can have Kerala Mutton Curry with rice, porotta or chapathi.
Tip
If the gravy reduces too fast before the meat is tender, add hot water in small amounts. Cold water toughens the meat.
