Mutton Fry Easy
A proper Kerala fry — mutton tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 3 servings
- 1/2 kg Mutton clean and — cut into small pieces
- 2 nos Green chillies — sliced
- 1 piece Ginger
- 1/2 tsp Turmeric powder
- 2 sprig Curry leaves
- 1/2 cup Coconut — cut into thin pieces of ½ cm long, thenga kothu
- 1 tsp Salt
- 1/2 tsp Mustard seeds
- 2 To Water
- 1 tsp Onion — sliced
- 3 tsp Coriander powder To be ground after roasting together
- 1 tsp Chilly powder To be ground after roasting together
- 8 piece Pepper corn To be ground after roasting together
- 1/4 tsp Jeera To be ground after roasting together
- 2 piece Cinnamon To be ground after roasting together (Karugapatta)
- 3 piece Cloves To be ground after roasting together (Grambu)
- 1/2 tsp Cummin seeds To be ground after roasting together (Jeerakam)
- 6 piece Garlic To be ground after roasting together
- 1 nos Onion Sliced and to be ground after roasting together, small
Preparation
Step 1
Fry the coconut pieces with little salt and turmeric powder till golden brown.
Step 2
Grind all the roasted spices with onion and garlic.
Step 3
Mix with meat and add the fried coconut.
Step 4
Add water, sliced green chillies, turmeric powder, ginger and curry leaves.
Step 5
Stir everything together thoroughly.
Step 6
Put the lid on and cook on a very low fire until the meat is tender and gravy dry.
Step 7
Heat the oil in pan.
Step 8
Season with mustard and onion.
Step 9
Add meat and fry until oil separates.
Step 10
Mutton Fry is ready.
Step 11
Serve Mutton Fry hot.
Step 12
You can have mutton fry with rice or rotis.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
