Mutta Thoran | Scrambled Eggs With Coconut
The everyday side dish that Kerala never tires of. Egg is shredded fine, tossed with coconut and spices, and cooked just enough to soften without losing its bite.
Ingredientsfor 2 servings
- 1 nos Onion — sliced
- 1 nos Green chilly — chopped
- 2 nos Egg
- 1/4 tsp Turmeric powder
- 1 cup Coconut(grated
- 1 tbsp Coconut oil
- Curry Leaves, a few
- Salt, as needed
Preparation
Step 1
Gather and prep all your ingredients before you begin.
Step 2
Warm coconut oil in a pan. Add sliced onion and Let it cook for 2 minutes.
Step 3
Add green chilly, turmeric powder and salt. Continue cooking for 2 to 3 minutes.
Step 4
Add the grated coconut, Roast till they turn dry and an aroma is released.
Step 5
Finally pour the eggs to the pan on top of the masala. Fry till the content looks dry. That’s the Thoran consistency.
Step 6
Egg Thoran is ready. Serve hot.
Tip
This same method works for almost any vegetable: beans, beetroot, carrot, raw banana — swap the main vegetable and keep everything else the same.
