Mutta Surka Easy
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 3 servings
- 1 cup Raw rice
- 1 cup Boiled rice
- 2 nos Egg
- Sugar, to taste
- Salt A pinch
- Oil — for frying
Preparation
Step 1
Soak rice for 4 to 5 hours.
Step 2
Grind well all the ingredients using water without lumps. It must be a thick batter.
Step 3
Warm the oil in a kadai and pour 1 tbsp batter and fry both sides. Do it in a low flame. Mutta surkas are ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
