Mutta Surka
A special dish from the Malabar region in Kerala made from rice and egg. You can have this with any curry of your choice. This is the best tea time snack.
Ingredientsfor 4 servings
- 1 cup Boiled rice
- 2 Egg
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Soak rice in water overnight.
Step 2
Grind it into a thin paste with out or by adding very little water.
Step 3
Beat the eggs and Stir everything together thoroughly with the ground rice batter.
Step 4
Warm the oil in a pan, pour a spoon full of battery into the oil and fry in hot oil until it goes golden brown colour on both sides.
Step 5
Mutta surka is ready to serve. Serve it hot with mutton, beaf or chicken curry.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
