A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 5 servings
- 4 Egg
- 4 tbsp Sugar
- Ghee, to taste
- Raisins and cashew nut, to taste
- 2 Cardamom
- Baking powder a pinch
Preparation
Step 1
Beat egg, sugar, baking powder and cardamom together.
Step 2
Heat ghee in a deep non-stick vessel and roast raisins and cashewnut in it. Take it out.
Step 3
Add more ghee if required and pour the egg mixture to the vessel.
Step 4
Put the lid on and cook for 10-15 minutes in low flame.
Step 5
In between sprinkle the raisins and cashewnut.
Step 6
Get it from flame and let it cool for 10 minutes.
Step 7
Unmould to a serving plate and serve it sliced as tea time snack or while breaking fast.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
