A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 3 servings
- 10 nos Eggs
- 3 tsp Maida
- 300 ml Water
- Sugar, to taste
- Rose water, to taste
Preparation
Step 1
Mix eggs in a bowl and keep it for about 30 minutes.
Step 2
Beat it well using a egg-beater to make it frothy.
Step 3
Get the beaten froth and make toast them on a dosa tawa.
Step 4
As it will be hard to take it using a spatula, use a knife to take it off the tawa.
Step 5
Place one on a plate and sprinkle a little sugar over it.
Step 6
Top it with another one and sprinkle sugar over it.
Step 7
Repeat the procedure till all the dosas are finished.
Step 8
Before serving, pour a little rose water over it.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
