Mutta Curry
A deeply satisfying mutta curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 3 Hard Boiled Egg
- 1 Tomato
- 2 Green chilly
- 3 Shallots
- 1/2 Coconut Grinded coconut
- 1 tsp Chilly powder
- 1/2 tsp Turmeric powder
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Heat the oil in a vessel and sautT shallots in it.
Step 2
Add tomato, turmeric powder and chilly powder. cook again.
Step 3
Mix in the green chilly, salt and curry leaves.
Step 4
Pour the grinded coconut and give it a good stir.
Step 5
Pour water as needed. Boil.
Step 6
Mix in the hard boiled eggs and simmer in low flame for 2-3 minutes.
Step 7
Serve it with pathiri to taste best.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
