Mutta Cake
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 4 servings
- 5 Eggs
- 1 cup Flour
- 1 cup Sugar
- 3 Cardamom
- Salt, to taste
- 1/2 cup Semolina
- 2 tbsp Pure ghee
Preparation
Step 1
Beat egg, salt and sugar till it rises thrice its original amount.
Step 2
Mix in the cardamom, flour, and semolina thoroughly with a spoon. Don¦t beat while adding flour. The cake will be spoiled otherwise.
Step 3
Heat ghee in a pressure cooker, or flat, bottom thick small vessel in low flame.
Step 4
Pour the prepared mixture to the vessel.
Step 5
Put the lid on and cook for 7-15 minutes in low flame.
Step 6
You can remove the lid in between once the cake rises.
Step 7
Unmould and serve it sliced.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
