Mussel Majboos
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 3 servings
- 150 g Mussels
- 1 kg Biryani rice
- 4 nos Tomato
- 1 inch Ginger
- 1 Clove Garlic
- 1/2 tsp Pepper
- 3 nos Onion
- 1 nos Carrot
- 2 nos Green chilly
- 4 nos Beans
- 2 nos Dry lemon
- 2 small Karuva patta
- 1/2 tsp Cumin seeds
- 2 nos Cardamom
- 2 ½ Majboos masala
- 1/2 tsp Garam masala
- 1/2 tsp Chilly powder
- 1/4 tsp Turmeric powder
- Oil, to taste
- Water, to taste
- Salt, to taste
Preparation
Step 1
Marinate the fish in chilly powder, turmeric powder and salt. Fry it in oil. Set aside.
Step 2
Heat the oil in a cooker and cook karuva patta, cardamom, cumin seeds in it.
Step 3
Add onion, ginger, garlic and cook well.
Step 4
Next, add tomato, beans, green chilly, and carrot. cook it, stirring again.
Step 5
Add majboos masala, garam masala curry leaves mussels and salt. cook it, stirring again.
Step 6
Now pour water as needed and mix in the dry lemon.
Step 7
Add the rice to it and Put the lid on and cook till the water drains or till the rice gets well cooked.
Step 8
Serve it hot.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
