Mushroom With Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- 50 g Button mushrooms — chopped
- 80 g Boneless chicken — cubed
- 1 tbsp All purpose flour Maida
- 3 nos Onions — finely sliced
- 1 nos Tomato — finely sliced
- 2 nos Potatoes peeled and — cubed
- 2 tbsp Red chilly paste
- 1/2 inch Ginger — grated
- 5 Cloves Garlic — grated
- Ajinomoto A pinch
- 1/2 tsp Vinegar
- 1 Spring Thyme — finely chopped
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing mushroom with chicken, Heat the oil in a vessel and sautT in the onions till it becomes transparent.
Step 2
Drop in the ginger and garlic. cook it, stirring for 2 minutes on low heat.
Step 3
Toss in the tomato, potatoes, chicken and salt. Stir everything together thoroughly.
Step 4
Next, add in the red chilly paste, vinegar and ajinomoto with required water. Stir everything together thoroughly and allow it to cook.
Step 5
Put in the mushrooms and allow it to cook with thyme.
Step 6
In a bowl mix in maida with a little water and pour it into the chicken-mushroom mixture. Stir everything together thoroughly and take it off the heat.
Step 7
Mushroom with chicken is ready. Serve hot.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
