Mushroom Curry - Spicy
This homestyle mushroom curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 2 servings
- 500 g Mushrooms
- 12 - Pearl onions (Kunjulli)
- 6 nos Dry red chillies (Kollamulaku)
- Oil — for frying
- Salt, to taste
Preparation
Step 1
Make a fine paste of pearl onions and dry red chillies.
Step 2
Mix the paste well with mushrooms and set aside for half an hour.
Step 3
Warm the oil in a pan.
Step 4
Add chopped small onions and fry till it gets brown in colour.
Step 5
Add mushrooms amd cook well when it is done.
Step 6
Check salt for taste.
Step 7
Goes well with chappathis.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
