Muringapoo Mutta Thoran | Drumstick Flowers Egg Stir Fry
one of the tastiest and mouth watering dishes from Kerala Cuisine. It goes well with rice, roti etc. It is a tasty South Indian stir fry preparation. You will find lots of drumstick trees in Kerala.
Ingredientsfor 2 servings
- 2 cup Drumstick flowers Muringappoovu
- 2 nos Eggs
- 5 nos Green chilli
- 5 – Shallots
- 1 Tspn Mustard seeds
- ½ cup Coconut — grated
- ½ Tspn Turmeric powder
- Salt, to taste
- 2 Tspns Coconut/Refined Oil
Preparation
Step 1
Get the Drumstick Flowers (Muringappoovu) separately from the branches of Drumstick tree and clean the flowers well and keep them separately.
Step 2
Clean the Shallots and Green Chilli also and crush them along with grated Coconut and Turmeric powder (preferably on a grinding stone – Ammikkal) and keep it separately.
Step 3
Heat the oil in a Frying pan/Cheenachatti and burst the Mustard Seeds in this hot oil. Then add the Shallots crushed along with Coconut, Green Chilli and Turmeric powder and stir it well.
Step 4
After about five minutes, break the Eggs and add the contents of the Eggs and required quantity of Salt into this mix and stir it further.
Step 5
When the contents of the Eggs are dried little, add the Drumstick flowers also and stir the Stir everything together thoroughly and close the Frying pan/Cheenachattti with a lid/plate and cook the mix for about another five minutes at low flame.
Step 6
After about five minutes remove the Lid/Plate, covered the Frying pan/Cheenachatti and stir the Stir everything together thoroughly, turn off the heat and take the Frying pan/Cheenachatti out from the stove.
Step 7
The delicious dish is ready. This Thoran can be served as a side-dish for Lunch/Dinner.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
