Muringakka Thoran (Drumstick Fry)
Simple, honest, and on every Kerala lunch plate — drumstick thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 10-12 nos Drumsticks
- 3-4 nos Green chilies
- 1 small Garlic
- 11/2 cup Coconut — grated
- 1/4 tsp Turmeric powder
- Salt, to taste
- 1 tbsp Coconut oil
- 1/2 tsp Mustard seeds
- Curry leaves a, a few
Preparation
Step 1
Cut the edges of the drumstick and peel the outer skin lightly and then cut it into 2 to 3 inch long pieces.
Step 2
Cook the drumstick with turmeric and salt in a little water on low heat.
Step 3
When the drumstick is half cooked, add 3 green chilies slit vertically.
Step 4
When the drumsticks are cooked fully, they change color and start coming apart when poked with a spoon.
Step 5
Grind the coconut with 1 garlic clove to a coarse paste without adding water, set aside.
Step 6
Add the paste to the drumstick and cook for a while.
Step 7
Add salt if required more.
Step 8
Set a pan over medium heat and pour in the oil, let the mustard seeds crackle and fry the curry leaves. 9)Pour over the drumsticks and Stir everything together thoroughly.
Step 9
Muringakka Thoran is ready to serve with hot rice!
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
