Mullan Fry
Slow-roasted in coconut oil with a generous hand of spices, this fish fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 3 servings
- 1 kg Mullan fish
- 3 tsp Chilly powder
- 3 tsp Coriander powder
- Ginger garlic powder - 1 tbsp
- 1 tsp Curry leaves
- 1 tsp Coriander leaves
- 4 nos Green chillies
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing mullan fry, first grind curry leaves, coriander leaves and green chillies.
Step 2
Mix it with fish. Add chilly powder, coriander powder, ginger -garlic paste and salt.
Step 3
Marinate it for 15 minutes.
Step 4
Fry it in pan and serve hot.
Step 5
Mullan fry is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
