Mulakashyam
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 1/2 cup Green gram Cheruparippu
- 3 cup Vegetables — cut into cubes
- White pumpkin (Kumbalanga)
- Raw banana(Pachhakkai
- Elepahant yam(Chena
- Snake gourd(Padavalanga
- Brinjal(Vazhuthananga
- Drumstick(Muringakka
- Jackfruit seeds(Chakka kuru
- 1 tsp Freshly powdered pepper
- 1 tsp Coconut oil
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds (Jeerakam)
- Salt, to taste
- Turmeric powder A pinch
- Curry leaves A, a few
Preparation
Step 1
Wash and soak the dal well.
Step 2
Cook the soaked dal and vegetables with turmeric powder and water for a while.
Step 3
Add pepper powder, salt and curry leaves.
Step 4
Cook, till the vegetables turn soft.
Step 5
Warm the oil in a pan.
Step 6
Let the mustard seeds crackle and cumin seeds.
Step 7
Pour the above into the curry.
Step 8
Serve while still hot with rice, raitha and papadam.
Tip
Taste as you go. Recipes are guidelines — your palate is the final judge. Adjust salt, sourness, and heat to what tastes right to you.
