Morappam
Morappam a Kerala recipe which is a very common name as kuzhi panniyaram. Morappam can do many versions one is leftover batter using with other ingredients and another one is a direct grind of this purpose of morappam.
Ingredientsfor 4 servings
- 2 cup Dosa batter
- 3 nos Green chillies
- 2 tbsp Coconut — chopped
- 1 piece Ginger
- 2 tbsp Semolina rava
- Asafoetida powder A pinch (Kayam)
- Salt, to taste
- Coconut oil, to taste
- Curry leaves, a few
- 1 tsp Mustard
Preparation
Step 1
For preparing morappam, fry mustard and curry leaves in oil.
Step 2
Pour this in dosa batter.
Step 3
Add ginger, green chillies, coconut, asafoetida and salt.
Step 4
After sometime, add semolina and mix.
Step 5
Pour the batter in unniappam tawa and fry it.
Tip
The fermented batter is the heart of good appam. Give it at least 8 hours to rise — overnight is best. The slight sourness is what makes appam special.
