Modaks
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 3 servings
- 250 g Rice flour
- 1/2 cup Coconut — grated
- 125 g Jaggery crushed, Sharkara
- 1 tsp Cardamom powder podi (Elakka)
Preparation
Step 1
For preparing modaks, cook the coconut, jaggery and cardamom adding some water in low flame till thick.
Step 2
Boil 200 ml of water and add to it the flour, a little at a time, stirring continuously and cook in low flame till the mixture turns dry.
Step 3
Take it off the heat., add 1/2 tbsp oil and knead to a smooth dough.
Step 4
Divide the flour and the coconut mixture into equal number of portions, form each dough into a cup, stuff with coconut mixture and shape into a pyramid, sealing the edges well.
Step 5
Steam cook for 10-15 mts and serve either hot or cold.
Step 6
Modaks is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
