Mixed Vegetable Curry
This homestyle potato curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 4 servings
- Potato (boiled) : 3 medium
- Vella Kadala (Chana
- Black Kadala (Bengal gram
- Payar (boiled including 3)} : 1 big cup
- Onion : 3 medium
- Green Chilly (Chopped) : 2 nos
- Coconut Milk
- White Pepper Powder : 1 tsp
- Cherry (Chopped) : 10 nos
- Raisins : 10 nos
- Cardamom : a, a few
- Clove : a, a few
- Cinnamon : 1 medium piece
- Salt, to taste
Preparation
Step 1
Boil onion in water. Add green chilly.
Step 2
Add boiled potato.
Step 3
Add boiled vella kadala (Chana), boiled black kadala (Bengal Gram) and boiled payar and salt.
Step 4
Add coconut milk and boil.
Step 5
Add cherry into it.
Step 6
Add raisins.
Step 7
Add pepper powder on it.
Step 8
Mix veg curry is ready.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
