Mixed Vegetable Coconut Sambhar
This kerala style sambhar goes well with rice. The sambhar is prepared with vegetables cooked in coconut mixture tamarind water.
Ingredientsfor 6 servings
- 1/4 cup Toor dal
- 1 tsp Mustard seeds
- 1 Potato
- 1 Carrot
- 1/4 cup Green peas
- 2 Onion
- 1/2 cup Beans
- 1/4 cup Elephant foot
- 1 tsp Salt
- 6 Dry chillies
- 3 tsp Coriander seeds
- 1 tsp Bengal gram
- 1 tsp Cumin seeds
- 1 tsp Coconut — grated
- 1 tsp Hing
Preparation
Step 1
Pressure cook dal with 3 cups of water.
Step 2
Now cooked dal is ready.set aside.
Step 3
Cook vegetables like carrot,potato,elephant foot,beans,carrot,greenpeas with salt for 10 minutes.
Step 4
Now cooked vegetables are ready.set aside.
Step 5
Heat another kadai and add red chillies,coriander seeds,bengal gram and cumin seeds with 1tsp oil.
Step 6
Remove from tawa and mix with coconut.Grind to a paste with enough water.set aside.
Step 7
Warm the oil in a kadai add mustards.when mustards allow to crackles add red chilly and curry leaf.set aside.
Step 8
When vegetables cooked add the cooked dal and temperinginto a vessel.Add hing powder,let it bubble for 2 minutes.
Step 9
Now mixed vegetable coconut sambhar is ready to serve.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
