Mixed Thoran
Mixed Thorn is a combination of vegetables, stir fried with onion and other spicy ingredients. No Kerala meal as well as a Sadhya is complete without a Mixed Thoran. Mixed Vegetable Thoran is unique and the dry dish is a must with rice.
Ingredientsfor 4 servings
- Carrot & cabbage(finely chopped
- Or
- Broccoli and Green peas(Cut broccoli into small pieces
- Or
- And Raw banana(Cut raw banana into small pieces (Cheera)
- 2oo g Vegetable each item
- 1 nos Onion medium
- 3 - Green chillies — chopped
- Ginger — finely chopped
- 1/2 cup Coconut — grated
- Curry leaves, a few
- Oil A little
- 1 tsp Mustard seeds
- Salt, to taste
Preparation
Step 1
For preparing Broccoli and green peas Mixed Thoran, first Heat the oil in a pan.
Step 2
Let the mustard seeds crackle.
Step 3
Add green chillies and stir it for sometime.
Step 4
Add onion, curry leaves, ginger and cook well until onions are just browned.
Step 5
Add turmeric and salt and give it a good stir.
Step 6
Add half cup of water.
Step 7
Add green peas, broccoli and grated coconut and give it a good stir.
Step 8
If there is no water left, add a little more water.
Step 9
Close the pan and cook well on a low flame.
Step 10
Stir in between and check the level of salt.
Step 11
Serve Mixed Thoran hot with rice.
Step 12
For Carrot & cabbage thoran: Follow the same method above, but do not add much water, just sprinkle some water drops.
Step 13
For Cheera & raw banana thoran: Follow the same method above. First add banana to the sauteed items and then let it go for some time, then add cheera. Not much water is required.
Step 14
You can use any other combinations of 2 or more veg which are left over and make Thorans.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
