Mixed Burfi
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 6 servings
- 1/2 cup Gram flour Kadala mavu
- 1/2 cup Coconut — grated
- 1/2 cup Milk
- 1/4 cup Sooji
- 1/4 cup Wheat flour
- 1/4 cup Raw rice flour
- 2 cup Sugar
- 500 ml Ghee
Preparation
Step 1
Fry gram flour for 4-5 minutes. Sieve and set aside.
Step 2
Fry sooji till golden in color.
Step 3
Fry rice flour and wheat flour separately till aroma comes, sieve and set aside.
Step 4
Grind the coconut in a mixer.
Step 5
Mix all the flours, sooji, milk and coconut. Set aside.
Step 6
In a heavy bottomed pan, boil 2 cups of water, add sugar and give it a good stir.
Step 7
When the sugar syrup starts boiling, add the flour mixture and stir continuously, adding ghee.
Step 8
When the burfy gets separated from the sides of the pan, remove from fire and transfer the ingredient to a greased plate.
Step 9
Spread it evenly, and after 2 minutes make squares.
Step 10
After 5 minutes separate the squares.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
