Minced Meat Ada
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 5 servings
- 250 g Meat/Chicken — minced
- 3 nos Onions — chopped
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 4 nos Green chillies — chopped
- 1/4 tsp Turmeric powder
- 1 tsp Coriander powder
- 1/2 tsp Garam masala
- Coriander leaves A small bunch — chopped
- Oil, to taste
- Salt, to taste
- 250 g All purpose flour Maida
- Water, to taste
- Salt, to taste
Preparation
Step 1
Cook the minced meat with turmeric powder, coriander powder, salt and little water. Cook in low flame until the water evaporates completely. Set aside.
Step 2
Place a pan on the stove and pour oil. Heat the oil and fry chopped onions and green chillies until golden in color.
Step 3
Add ginger-garlic paste, cooked meat, garam masala and coriander leaves. Fry for sometime and set aside until done.
Step 4
Prepare a firm dough by mixing flour, water and salt.
Step 5
Get a small portion of the dough and flatten or roll out into a round.
Step 6
Place the previously prepared meat filling in the centre. Press tight the edges to form the shape of a semicircle.
Step 7
Continue the process with remaining dough.
Step 8
Get a frying pan and pour sufficient coconut oil for frying. Heat the oil and fry in hot oil the minced meat ada until golden in color.
Tip
The binding point is everything — cook the mixture just until it holds shape when pressed. Overcooked, it turns hard; undercooked, it crumbles.
