Milk Paayasam
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 6 servings
- 10 cup Milk
- 4 tbsp Rice good quality brown rice
- 1 cup Sugar
- 50 g Cashew nuts sliced lengthwise
- 1 tsp Cardamom (Elakka)
- 1/4 tsp Saffron strands powdered, Kumkumapoo
- Rose essence — optional
Preparation
Step 1
Get half quantity of measured milk(5 cups) and add 5 cups of water.
Step 2
Boil and add washed rice. Cook in medium heat.
Step 3
After rice is cooked, pour remaining milk and cashew nuts. Continue cooking.
Step 4
When the quantity of milk has reduced to half, add sugar. Stir everything together thoroughly and boil.
Step 5
Add powdered kumkumapoo and cardamom powder.
Step 6
Remove from fire.delicious milk payasam. :-You can add rose essence if you prefer the taste(optional).
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
