Meat Pizza
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 2 servings
- Butter : 2 tsp
- Onion : 1 no
- Chilli flakes : 1 tsp
- Capsicum : 1 no
- Tomato : 1 no
- Chicken : 50 gm
- Egg : 1 no
Preparation
Step 1
Set a pan on the stove heat butter.
Step 2
Add the onions, capsicum and red chilli flakes and sauté. Add the salt.
Step 3
Add the shredded and cooked chicken pieces.
Step 4
Add the tomatoes and sauté.
Step 5
Take it off the heat. Break an egg and add just mix.
Step 6
Apply tomato sauce on a pizza base.
Step 7
Apply the mixture and cook till done in a oven (usually it takes 15 minutes at the heat of 150 degree C).
Step 8
Serve while still hot with sauce.
Step 9
Sprinkle some cheese as topping if liked.
Step 10
I actually used the leftover chicken pieces from the curry I had. It did taste good.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
