Mathi Manga Curry | Sardine Mango Curry
A tantalizing dish that brings together the rich flavors of sardines, the tangy flavor of mango and a symphony of aromatic spices.
Ingredientsfor 4 servings
- 1/2 kg Sardines
- 1/4 kg Raw mango
- 2 tsp Red chilly powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Coriander powder
- 6 nos Shallots — sliced (Kunjulli)
- 1 piece Ginger — chopped
- 4 Cloves Garlic — chopped
- 3 nos Green chillies — chopped
- 1/4 tsp Fenugreek (Uluva)
- Curry leaves, a few
- 2 nos Dry red chillies
- 1 cup Medium thick coconut milk or 2nd extract
- 1/2 cup Thick coconut milk
- Salt, to taste
- Oil, to taste
Preparation
Step 1
For preparing the delicious dish, first cut raw mango into medium sized pieces. Set aside. Clean, wash and drain well the fish pieces.
Step 2
Set a kadai over medium heat and pour in the oil, add fenugreek, dry red chillies, shallots, ginger, garlic, green chillies and curry leaves. cook well until golden brown.
Step 3
Add chilly powder, coriander powder, turmeric powder and cook well in a low flame.
Step 4
Add 1 cup medium thick coconut milk and let it boil. Add mango pieces and cook.
Step 5
Add sardine fish pieces to it, cover it with a lid and cook well. Let the gravy thicken a bit. Next, add thick coconut milk and put off the flame before boiling starts. Pour 1 tbsp coconut oil into the curry dish.
Step 6
Serve the curry hot with rice. The tangy flavored spicy gravy makes a great dish.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
