Mathanga Thoran
A sweet side dish you can take with rice. Pumpkin is a very versatile vegetable. It has a special place in Kerala cooking and we have lots of recipes with it.
Ingredientsfor 4 servings
- 200 g Mathanga
- 3 Smal onion
- 2 Green chillies
- 5 Tablespoon Coconut oil
- 1 Teaspoon Turmeric powder
- Curry leaves
- 2 Tablespoon Grated coconut
- 1 Teaspoon Kaduku (uluva)
- 5 Garlic — chopped
- 1 Tablespoon Pepper
- A pinch (Jeerakam)
- Salt for taste
Preparation
Step 1
Add oil in a pan and add green chillies, small onion, curry leaves and cook it, stirring well.
Step 2
Stir in the mathanga to it and cook well.
Step 3
Next, add crushed pepper, garlic, turmeric powder, jeerakam and Stir everything together thoroughly.
Step 4
Sprinkle some water in it and cook in a medium flame.
Step 5
Add the grated coconut to this and Stir everything together thoroughly and remove from fire.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
