Mathanga Payasam-Pumpkin Kheer
Pumpkin kheer is a very popular dessert.Thos is an ideal sweet dish to make on some special occasions and festivals.Traditionally pumpkin is cooked with cow peas,jaggery,grated coconut and flavoured with cardamom powder and fennel seed powder.
Ingredientsfor 6 servings
- 2 cup Pumpkin cubes
- 1 cup Ragi
- 11/2 cup Cow peas soak overnight
- 1 Coconut — grated
- 1 cup Jaggery — powdered
- 1/2 tsp Cardamom powder
- 1/2 tsp Fennel seed powder
- Salt pinch
Preparation
Step 1
Peel off the skin of pumpkin,remove the seeds and cut into small cubes.
Step 2
Cook cow peas in 4 cup water with a pinch of salt for 3 whistles.
Step 3
Add pumpkin cubes and pressure cook again for 2 whistles.
Step 4
Grind ragi with little water to make a fine paste and add into the payasam.
Step 5
Add powdered jaggery and let i boil.
Step 6
Add grated coconut.
Step 7
Fold everything together gently and cook again for 2-3 minutes.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
