Matha Ela Thoran | Pumpkin Leaf Thoran
A styled stir fry prepared from fresh tender pumpkin leaves or Matha Ela. Matha Ela Thoran goes perfect with hot rice for noon day meals. Its a great idea to include these green leafy vegetables in your diet.
Ingredientsfor 3 servings
- 15 nos Pumpkin Leaves Matha Ela
- 1/2 cup Coconut — grated
- 1/2 cup Small onions (Kunjulli)
- 3 nos Green chillies
- 3 tbsp Coconut oil
- 1 tsp Mustard seeds
- Salt, to taste
- Curry leaves, a few
- 2 nos Dry red chillies (Kollamulaku)
Preparation
Step 1
For preparing the delicious dish, finely chop the tender leaves of fresh pumpkin after cleaning them well with water.
Step 2
Mix together the chopped leaves, grated coconut, green chillies, salt and chopped small onions.
Step 3
Set a pan over medium heat and pour in the oil or a kadai.
Step 4
Let the mustard seeds crackle and cook dry red chillies and curry leaves.
Step 5
Add the pumpkin leaves-coconut mixture and Stir everything together thoroughly.
Step 6
Put the lid on and cook on a low flame.
Step 7
When done, remove the lid and Stir everything together thoroughly.
Step 8
Continue to cook, till done.
Step 9
You can also add garlic, if desired.
Step 10
The Thoran, a delicious stir fry is ready.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
