Mashed Banana Delight
Cooked and mashed ripe bananas/ethakaya filled with coconut filling and later deep fried.
Ingredientsfor 4 servings
- 2 nos Ripe bananas Ethakkaya
- 2 Dsp Sugar
- 3/4 cup Coconut — grated
- Oil — for frying
Preparation
Step 1
For preparing mashed banana delight, first steam the bananas and mash well.
Step 2
Mix together grated coconut and sugar.
Step 3
Make lime sized balls with the mashed bananas. Make a hole in each ball and fill with coconut mixture. Cover up and seal the opening. Repeat likewise with remaining balls.
Step 4
Now, take a pan and pour sufficient oil for frying. fry in hot oil each ball till golden brown.
Step 5
Mashed banana delight, a favorite tea time snack is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
