Masala Omelette
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 2 servings
- 2 nos Eggs beaten
- 1/2 Onion chopped fine
- 1 nos Tomato cored,seeded and chopped fine
- 1 nos Green Chilly sliced finely
- 1/2 tsp Ginger chopped fine
- 4-5 nos Button Mushrooms — sliced
- 2 tsp Cheese — grated
- 4-5 Leaves Curry leaves — finely chopped
- 1/4 tsp Black pepper
- Salt, to taste
- Oil — for cooking
Preparation
Step 1
Warm the oil in a pan, add onion, ginger,green chillies, curry leaves, tomatoes and mushrooms. Stir everything together thoroughly.
Step 2
Cook on medium heat for about 5 minutes till the vegetables are tender. Add salt and pepper to season.
Step 3
Heat the oil in a flat pan. Add the beaten eggs and swirl the pan so that the egg fills the pan.
Step 4
Cook till underside is almost golden brown. Flip over and add the vegetable mix and sprinkle cheese over the egg.
Step 5
When set, fold over and transfer to a serving plate.
Step 6
Masala omelet is ready and is ideal for breakfast along with bread.
