Masala Egg Bread Toast
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 3 servings
- 6 Bread slices
- 3 Egg
- 1/4 cup Milk
- 1 Green chilly
- 1/2 tsp Pepper powder
- 1/4 tsp Turmeric powder
- 2 tbsp Coriander leaves
- Salt, to taste
- 2 tbsp Oil
Preparation
Step 1
Cut the bread slices into 2 pieces.
Step 2
In a bowl add eggs,chopped coriander leaves and green chilly,turmeric powder and salt.
Step 3
Add milk,pepper powder and Stir everything together thoroughly.
Step 4
Dip each bread slices in egg mixture.
Step 5
Set a pan over medium heat and pour in the oil and toast the both sides of bread.
Step 6
Spicy Masala egg bread toast is ready.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
