Masala Coated Chicken Fry
Slow-roasted in coconut oil with a generous hand of spices, this chicken fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 3 servings
- 1 cup Chicken boneless — cut into long strips
- 10 nos Shallots (kunjulli)
- Ginger garlic paste - 2 tsp
- 1 tbsp Chilly powder
- 1 tsp Turmeric powder
- 4 Cloves Garlic
- 1 tbsp Vinegar
- 2 tbsp Rice powder
- 1 tbsp Corn flour
- Curry leaves, a few
- Salt, to taste
Preparation
Step 1
For preparing masala coated chicken fry, mix chicken pieces with rice powder, corn flour, turmeric powder and ginger-garlic paste.
Step 2
Fry in hot oil it in oil and set aside.
Step 3
Grind shallots, chilly powder, garlic with vinegar and salt.
Step 4
Set a pan on the stove, heat oil. Fry the ground masala in it.
Step 5
Add curry leaves and chicken pieces. Fry and mix again.
Step 6
Masala coated chicken fry is ready.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
