Manjakoori Fish Fry(Meen)
Slow-roasted in coconut oil with a generous hand of spices, this fish fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- 1/2 kg Fish
- 2 tsp Chilly flakes
- 1 tsp Chilly powder
- 1 tsp Turmeric powder
- 4 Cloves Garlic
- 1 small Tamarind
- 1 tsp Curry leaves
- Salt, to taste
- 1 tbsp Rava
Preparation
Step 1
For preparing manjakoori fish fry, grind chilly flakes, chilly powder, curry leaves, turmeric, garlic and tamarind.
Step 2
Apply the ground paste on the fish pieces along with salt and rava. Keep it for 5 minutes.
Step 3
Fry in hot oil it in oil.
Step 4
Manjakoori fish fry is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
