Mango Souffle
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 400 g Mango
- 3 tsp Gelatin
- Egg white from 2 eggs
- 3/4 cup Whipped cream
- 1 cup Sugar — powdered
- 1 tsp Mango essence
- 2 Drops Yellow color
Preparation
Step 1
Blend well the mango and sugar to form a thick paste.
Step 2
Double boil the gelatin in 1/4 cup water.
Step 3
Add this to the above paste and keep in freezer for about 10 minutes or until it is set.
Step 4
Add whipped cream and blend well.
Step 5
Beat the egg white and add.
Step 6
Mix slowly using a spoon.
Step 7
Add essence and yellow color.
Step 8
Keep this in freezer for 1/2 hour.
Step 9
Garnish with mango slices and cream.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
