Mango Pudding - Medley Of Fresh Fruits
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 8 servings
- 3 cup Water
- 1 Tin Condensed milk
- 3/4 cup Corn flour
- 2 cup Fresh thick mango puree
- 1 cup Thick whipping cream
- 1-2 tbsp Sugar adjust sweetness
- 1 tsp Vanilla essence
- Assorted jelly — optional
- 1 cup Assorted fresh fruits diced mango, cherry, kiwi,strawberry
Preparation
Step 1
In a deep pan, combine water, condensed milk, cornflour, mango puree and sugar.
Step 2
Bring to a rolling boil stirring continuously. (about 10 minutes) : - use a wooden spatula to stir the contents to prevent from burning.
Step 3
Stir till the pudding mix coats the back of the spoon and is fairly thick. Remove from fire.
Step 4
Whisk with hand the vanilla essence and cream into the pudding and transfer to a square dish(or any other).
Step 5
Cool and leave to set in the fridge.
Step 6
Prepare jelly according to instructions on the packet and leave to set in the fridge.
Step 7
Break the jelly with a fork and pile on the pudding.
Step 8
Mango Pudding is ready! :- Serve the Mango Pudding with diced fruits.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
