Mango Cream
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 2 cup Mango puree
- 2 cup Cream
- 1/2 cup Sugar
- 2 tsp Gelatin
- 1/2 cup Water
- 3 tsp Lime juice
Preparation
Step 1
Add sugar to mango puree and mix.
Step 2
Soak powdered gelatin in 1/2 cup water and then melt it over fire.
Step 3
Add gelatin to mango puree and put in freezer.
Step 4
When setting starts, take out the mango puree and scrape the contents into a bowl.
Step 5
Add lime juice and fresh cream to the puree and beat well.
Step 6
Place the bowl back in the freezer and allow it to set.
Step 7
Mango cream is ready and cut into slices.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
