Mango Cake Easy
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 15 servings
- 2 cup Allpurpose flour Maida
- 2 tsp Baking soda
- 11/2 tsp Salt
- 2 tsp Cinnamon (Karugapatta)
- 3 nos Eggs
- 1/2 cup Veg oil
- 11/3 cup Sugar
- 1 tsp Vanilla
- 1/2 cup Golden raisins Onakka munthiri
- 1/2 cup Cashewnuts — chopped
- 2 cup Mango — diced
- 1/4 cup Flaked coconut
Preparation
Step 1
Preheat oven to 350 degrees ( F).
Step 2
Grease one pound loaf pan or square pan.
Step 3
Sift flour, soda, salt and cinnamon into a large mixing bowl.
Step 4
Make a well and add the wet ingredients, fruits and Stir everything together thoroughly, till they are nicely incorporated.
Step 5
Do not over mix it.
Step 6
Pour into the pan and let stand for about 20 minutes.
Step 7
Bake for 1 hour.
