Manga Achar | Mango Pickle
Indulge in the vibrant flavors of Manga Achar, also known as Mango Pickle. It is a beloved condiment deeply rooted in South Asian culinary heritage.
Ingredientsfor 10 servings
- 1 kg Raw Mango
- 10-12 nos Green chillies (not too hot
- Piece Asafoetida (Kayam)
- 3 tbsp Vinegar
- 4 tbsp Kashmiri Chilly Powder
- 1/2 tbsp Chilly powder
- 1 tsp Fenugreek powder (Uluva)
- 2 tsp Mustard seeds
- 3 glass Water
- Salt, as needed
Preparation
Step 1
Chop the raw mangoes into small pieces.
Step 2
Sprinkle 1 tbsp salt over the mango pieces. Stir everything together thoroughly.
Step 3
Chop the green chillies into small pieces.
Step 4
Warm the oil in a pan and fry the asafoetida piece.
Step 5
Remove kayam from oil and powder it.
Step 6
In the remaining oil, let the mustard seeds crackle.
Step 7
Add the chopped green chillies and fry. Keep the flame to the lowest level.
Step 8
Add the chilly powders and fry.
Step 9
Add fenugreek powder and crushed and powdered asafoetida.
Step 10
Add 3 glasses of boiled water and required salt.
Step 11
Add the chopped mango pieces and boil.
Step 12
Add vinegar. After boiling starts, add required salt and put off the flame.
Step 13
Manga Achar is ready. After the pickle has cooled down, store in air tight containers.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
