Mandeli Fish Fry(Meen)
Kerala-style dry fry where fish is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 4 servings
- ½ kg Mandeli fish
- 3 tsp Chilli powder
- 1 tsp Tamarind thick pulp
- 1 tbsp Rice powder
- ¼ tsp Turmeric powder
- Oil — for frying
- Salt, to taste
Preparation
Step 1
Wash and clean the fish.
Step 2
Marinate with chilli powder, turmeric powder, salt, tamarind pulp and rice powder. Set aside for 5 minutes.
Step 3
Heat the oil in a tawa.
Step 4
Place the fishes one by one and fry on a medium flame till each side gets well cooked.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
