Malai Poori
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 5 servings
- 2 cup Maida
- 2 nos Potato small
- 1 tbsp Dalda
- 1 tbsp Rava
- Salt, to taste
- Water to mix
- Oil
Preparation
Step 1
Boil potatoes and mash them well.
Step 2
Mix together maida, salt, rava, mashed potatoes and dalda.
Step 3
Add enough water if needed to make a smooth dough.
Step 4
Set aside for at least 30 minutes.
Step 5
Roll it to small poories using a chappati board.
Step 6
Fry each in oil.
Step 7
For puffing the poories, press them down slightly while frying with the chattukam used for frying the poories.
