Malabar Style Ghee Rice
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 4 servings
- 2 cup Basmathi rice
- 4 nos Onion — sliced
- 1 nos Green chilly — chopped
- 2 nos Cinnamon (Karugapatta)
- 4 nos Cloves (Grambu)
- 1 nos Bay leaves
- 2 nos Cardamom — crushed (Elakka)
- Ginger garlic paste - 1 tbsp
- 1/2 tsp Cumin seeds (Jeerakam)
- Cashew nuts, a few
- Raisins, a few
- Ghee/dalda, to taste
- 3 cup Water
- Salt, to taste
Preparation
Step 1
For preparing malabar style ghee rice, wash and drain rice.
Step 2
Fry cashew and raisins in ghee.
Step 3
Fry 2 sliced onions in same ghee. When its color changes to brown, drain and set aside.
Step 4
In another pan, add little ghee, fry cinnamon, cardamom, cloves and cumin seeds.
Step 5
Add onion and fry again. Add ginger-garlic paste and chopped green chilly.
Step 6
Add the rice and fry till the color starts to change.
Step 7
Add salt and water. Put the lid on and cook rice.
Step 8
When done, decorate with fried cashews, raisins and onions.
Step 9
Add coriander or mint leaves on top.
Step 10
Malabar style ghee rice is ready.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
