Malabar Style Dry Beef
Malabar cuisine is famous for its bold flavors, aromatic spices, and unique cooking techniques. One of the most loved meat dishes in this region is Malabar Style Dry Beef.
Ingredientsfor 4 servings
- 1 kg Beef
- 1/2 cup Coconut Slices
- 1 1/2" piece Ginger
- 6 nos Green chillies
- 2 nos Onions sliced lengthwise
- 1 tsp Coriander Powder
- Curry leaves, a few
- 3/4 tsp Red Chilli Powder
- Lots of small red onions (Kunjulli)
- 1 tbsp Garlic paste
- 1 tsp Chilly powder
- 1 tsp Garam masala powder
- 1 tsp Coriander powder
- 1 tsp Cumin powder (Jeerakam)
- 1 nos Tomato — finely chopped
Preparation
Step 1
Cut beef into small cubes.
Step 2
Grind together the ingredients listed under "For Grinding". Marinate beef in the ground masala for 15-20 minutes.
Step 3
Put beef with the masala in cooker. Don`t add water. Keep cooker on slow flame for 5-7 minutes, then into full flame. Keep for 15-20 minutes after one whistle or until done.
Step 4
Chop coconut into small pieces.
Step 5
Add it after beef has been cooked and keep cooker for 1 more whistle.
Step 6
Fry coarsely ground small red onions and garlic.
Step 7
Add the powdered masalas.
Step 8
Add chopped tomato.
Step 9
Add cooked meat and Stir everything together thoroughly. Let it simmer for a few minutes.
Step 10
One soup cube added to the dish will give it that extra flavour.
Tip
Pressure cooking first saves time, but do not skip the dry-roasting step after — that is where the Kerala beef fry gets its signature dark, caramelised crust.
