Malabar Special Chicken Fry | Malabar Kozhi Porichathu
This chicken, locally known as Malabar Kozhi Porichathu, is a gem from the rich culinary heritage of Kerala’s Malabar region.
Ingredientsfor 4 servings
- 500 g Chicken
- 2 tsp Chilly powder
- 1/4 tsp Turmeric powder
- 2 tbsp Corn flour
- 1 tsp Lemon juice
- 1/2 tsp Garam masala
- 7 nos Green chilly
- 1 tbsp Ginger — chopped
- 1 tbsp Garlic — chopped
- Salt, to taste
- Oil — for frying
- Curry leaves In a good amount — for garnishing
Preparation
Step 1
For preparing the dish, first clean chicken and cut into small pieces.
Step 2
Marinate chicken pieces with a mixture of salt, lemon juice, corn flour, garam masala, red chilly powder and turmeric powder. Set aside for 30 minutes.
Step 3
Pour oil into a pan and heat it and fry the chicken pieces to a brown colour. Once the chicken is done remove from oil and set aside.
Step 4
Heat 2 tbsp oil in a pan and add chopped ginger and garlic. Let it cook for 2 minutes.
Step 5
Next, add green chillies and curry leaves, stir for a few seconds.
Step 6
Finally add fried chicken and Stir everything together thoroughly. take it off the heat.
Step 7
Serve Malabar Chicken Fry hot.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
