Malabar Rice Pathiri | Rice Pancakes
A staple flatbread of Kerala kitchens, cooked on a hot tawa until it puffs and develops golden spots. Tear it apart with your hands and use it to mop up every last drop of curry.
Ingredientsfor 3 servings
- 1 cup Rice flour
- 1 &1/2 cup Water
- 1 tbsp Oil
- Salt, to taste
Preparation
Step 1
Get a wok, add pathiri powder, water, salt and oil. Stir it.
Step 2
Combine very well without any lumps. Turn the flame on, cook on low heat. Stir continuously. Let it cook till it is a dough. Keep the dough aside for a few minutes till slightly cool.
Step 3
When the dough is still warm, knead it well with your hands until dough is soft and smooth. If you feel hot then dip your hands in water while kneading. Make lemon sized balls from the kneaded dough.
Step 4
Flatten the balls to get thin round shape (refer photo) using chapatti press or with the help of a steel plate and plastic cover just by spreading rice flour over it.
Step 5
Heat a flat nonstick pan on medium heat, place the pathiri on it, wait for few seconds then flip over, this time wait for little more time and flip over again. When it puffs up, remove pathiri from the pan. Make sure that the pathiris are not getting browned.
Step 6
Goes well with curries.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
