Malabar Neichoru
Ghee rice or neichoru is a popular muslim dish for ceremonies and weddings.
Ingredientsfor 5 servings
- 500 g Basmati rice
- 1 nos Onion — sliced
- 1 inch Cinnamon (Karugapatta)
- 3 nos Cloves (Grambu)
- 3 Pods Cardamon
- 1 litre Water
- 1 tbsp Ghee
- 11/2 tbsp Coconut oil
- 1 nos Onion — finely sliced
- Salt, to taste
- Cashew nuts, a few
- Raisins Few, Onakka munthiri
Preparation
Step 1
Wash basmati rice and drain well.
Step 2
Place a pan on the stove and pour ghee. allow to crackle cinnamon, cloves and cardamom.
Step 3
Add onion and fry crisp.
Step 4
Add the drained basmati rice and fry for 5 minutes.
Step 5
Add boiling water and required salt.
Step 6
Cover with a lid and cook in low heat until done.
Step 7
Stir gently and wait till the water has evaporated completely.
Step 8
Place a pan on the stove and pour coconut oil. Fry the onion, cashew nuts and raisins. Scatter on top of malabar neichoru.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
