Malabar Mutton Biriyani | Kerala Malabar Biryani
A slow-assembled mutton biryani where each grain of rice carries the aroma of cardamom, clove, and slow-cooked masala. Served with raita and pickle, it is a complete meal on its own.
Ingredientsfor 4 servings
- 1/2 kg Basmati rice
- 1/2 kg Mutton Cleaned and — cut into big pieces
- 1/4 kg Onion — finely sliced
- 100 g Tomato — finely sliced
- 10 nos Green chillies
- 10 g Ginger
- 8 nos Garlic cloves
- 1 tsp Pepper powder
- 1 tsp Turmeric powder
- 10 g Cashew nuts
- 4 Sticks Cinnamon (Karugapatta)
- 4 nos Cloves (Grambu)
- 4 nos Cardamom (Elakka)
- 1 tbsp Curd
- 1/2 tsp Fennel seeds (Perinjeerakam)
- 1/2 bunch Mint leaves Pudhina
- 1/2 bunch Coriander leaves
- 1/4 cup Ghee
- 1/4 cup Oil
- Salt, to taste
Preparation
Step 1
For preparing Malabar Mutton Biriyani, grind together ginger, garlic and green chillies into a coarse paste.
Step 2
Clean and soak rice for about 30 minutes Set aside.
Step 3
Heat the oil in a heavy bottomed pan or kadai.
Step 4
Add 1/2 of the sliced onions and fry, till golden brown. Set aside.
Step 5
Heat up the remaining oil.
Step 6
Season fennel.
Step 7
Add rest of the sliced onions and cashews and fry, until softened.
Step 8
Add chopped tomatoes, ground paste, turmeric powder, pepper powder, curd, mint and coriander leaves and sauté, till the oil starts to separate.
Step 9
Add mutton and cook, till the mutton is 3/4th cooked.
Step 10
Add salt.
Step 11
Cook the rice along with all spices and salt, till it is 3/4th done.
Step 12
Grease a vessel with little ghee.
Step 13
Spread 1/2 of the mutton masala and place 1/2 of rice over it.
Step 14
Pour 2 tbsp of ghee on top of it and sprinkle some roasted onion.
Step 15
Spread the remaining masala and top it with rice followed by ghee and fried onion.
Step 16
Close it with a air tight lid and put Mutton biryani in dum for 10 -15 minutes.
Step 17
We can put Mutton biryani in oven after layering it in a pyrex or oven safe bowl. Pre heat the oven for 200 degree and keep it for about 10 minutes :- If using microwave, layer Mutton Biryani in a microwave safe container and keep the power in defrost mode and set 10 minutes.
Step 18
Serve mutton biryani hot with raita and papad.
Tip
Whole spices — cardamom, cloves, cinnamon — go in early with the oil. They need time to infuse their flavour into the fat.
